While Dark Souls III borrows from its predecessors, it does so in a way that offers the best rendition of what came before. Start the game while online. Stay Online. Play online, get invaded, summon help, and read messages because they are a huge part of the game that you will miss out on, and without them you could never fully appreciate this game for what it is. Be better for it. No but seriously, there is no other way aside from what the fine gentlemen above me have suggested. DSfix will most likely not see another update anytime in the foreseeable future because the Dev's are most likely done patching this game.
